Happy Cooking with LG SolarDom: Lemongrass Grilled Chicken

 Allow me to play with this function again, haha, tell you the truth, I'm really love something grilled.

So, after making the Croque Monsieur I still want to grill something. Because using the LG SolarDom is easy (and the grill is very hot), now I want to make Kai yan takrai (Lemongrass Grilled Chicken), grilled chicken with lemongrass fragrance ^^.
There are 3 levels of grill on LG SolarDom, gr-1 (the hottest), gr-2 (medium heat) and gr-3 (the lowest) this time, I use two levels of grill, medium and hot. Start by using the medium to warm the chicken, then increase the heat to cook the chicken. Actually it's quite hard to tell you the time you need to cook the chicken, because it depends on size of the chicken. So, you need to watch it carefully. 
Serve this chicken with papaya salad and sticky rice will be great, or better with a cup of chilled beer, hehe.
Note: Using plastic bag is easy, clean and the marinade cover the chicken better. While grilling the chicken, by pouring the water into the tray you will add moisture into the oven make the chicken moist and the tray will be easier to clean too. 

Lemongrass Grilled Chicken 
Serves 4-5 


1kg ............................. Chicken tights, with skin on
Marinade 
80g ............................. Lemongrass, chopped
7g ................................ Coriander root, clean and chopped
3tbsp ........................... Evaporated milk (or whipping cream)
2tbsp ........................... Granulated sugar
4tbsp ........................... Soy sauce
3tbsp ........................... Oyster sauce
1/2tsp .......................... Salt


 Put all the marinade ingredients into a food processor and process until finely chopped.
Put the chicken into a plastic bag, and pour the marinade into the bag and rub the marinade into the chicken, seal the bag.
Let it marinate in the refrigerator 12 hours or overnight.
When you ready to cook, take the chicken out of the bag and remove the lemongrass from the skin of the chicken (you can't remove all of them but try your best because it will burn).
Select the Grill function, gr-1 and preheat the grill for 5 minutes.
Put the chicken tights on the rack, skin side up, and select the Grill function, gr-2 and  grill for 10 minutes.
Flip the chicken tights (now skin side down), and select the Grill function, gr-2 and  grill for 10 minutes.
Flip the chicken tights  skin side up, and select the Grill function, gr-1 and  grill for 5-7 minutes, until the skin is dark brown.
Flip the chicken tights (now skin side down), and select the Grill function, gr-1 and  grill for 5-7 minutes, until there are no red blood run out of the chicken (the inside temperature is about 80-85°C).
Serve with sticky rice and enjoy!
